Wine denomination: Franciacorta D.O.C.G. Brut “Satèn.

Grapes:
100% Chardonnay.

Soil types:
Alluvial moraine with medium, deep formation period: the texture is sandy-loam, the moraine stone is frequent or very frequent.

Harvest date:
End of August, the harvest takes place by hand in the cool hours of the morning.

Vinification:
Soft pressing of strictly whole grapes with fractional separation of the musts. First fermentation at controlled temperature in steel tanks until late spring with frequent batonnage.

Second fermentation:
The cuvèe, a union of the vinified bases, is made just before the tirage, which usually takes place in the months of April and May of the vintage following the harvest. The second fermentation and maturation can vary from a minimum of 24 months up to 36 months depending on the vintage.

Disgorgement:
When the maturation of the Satèn has reached the desired characters, disgorgement is carried out with the addition of the appropriate "Liqueur d'expedition". This product is presented in the "brut" version and dosed between 6-7 g / l of residual sugar. After a stop of about three months in the cellar for aging, the Franciacorta Satèn DOCG is dressed and is ready for shipment.
