Wine denomination: Franciacorta D.O.C.G. "Brut".

Grapes: Chardonnay and Pinot Nero.

Soil types: Alluvial moraine with medium, deep formation period: the texture is sandy-loam, the moraine stone is frequent or very frequent.

Harvest date: End of August, early September; the harvest is done by hand in the cool hours of the morning.

Vinification: Rigorous pressing of whole grapes with fractional separation of the musts. First fermentation in stainless steel at controlled temperature and with selected yeasts.

Second fermentation: The cuvèe, a union of the vinified bases, is made just before the tirage, which usually takes place in the months of April and May of the following year.

Disgorgement: Generally after 18-24 months when the ripening of the Brut has reached the desired characters, disgorgement is carried out with the addition of the "Liqueur d'expedition" dosing approximately 6 g / l of residual sugar. After a stop of about three months in the cellar for aging, the Franciacorta Brut DOCG is dressed and is ready for shipment.
