The Tolaini estate is located in the heart of the Chianti Classico area, where Sangiovese has a unique character. The company's technical team has identified in Vineyard n. 7 of Montebello a special correspondence between the soil, rich in clay and marl, the slope and the exposure; characteristics that over time have given life to an impeccable and original Sangiovese.
The Chianti Classico Gran Selezione, after resting in the cellar for 30 months, is harmonious, savory and fruity, capable of expressing elegance and intensity in the glass.
Production: 60 qt./ha.
Production area: Chianti Classico, Tuscany.
Soil: Silt and clay with a considerable presence of skeleton.
Vinification: The grapes, harvested manually, undergo a double selection: first the bunches and the portions of the bunch are chosen, then grape by grape is selected. Only perfectly intact grapes are placed in steel tanks or wooden truncated vats for fermentation.
Alcoholic fermentation: Fermentation lasts 20 days, during which the temperature of the vats is controlled by computer. Replacements are carried out every 8 hours and a delestage per week. Fermentation follows a short period of post-fermentation maceration.
Malolactic fermentation: The malaolactic fermentation is carried out in conical wooden vats of 48 hl or in tonneaux.
Aging: The wine remains for 18 months in wood, 6 of which on its fine lees. This is followed by a further 6 months of aging in steel and 6 months of aging in bottle.
This sensual wine features notes of red cherry, tobacco, leather, spices and licorice. The elegant and well-balanced tannins with the fruit highlight a fabulous degree of acidity which makes it a complex wine, with undeniable power and structure. The finish is long and pleasant, like an authentic Sangiovese.
