Production area / Vineyard: Vidor, one of the 15 municipalities included in the specification, Colbertaldo district.
Age: 60 years old.
Yield: 135 quintals ha.
Harvest period: Early September.
Vinification: Soft pressing with elimination of pressing and using not fully ripe grapes.
Second fermentation: 4 weeks at a temperature of 15 ° C to enhance the acidity.
Brilliant, pale straw yellow.
Perlage: Fine, more compact.
Nose: Fragrant blend of flowers and fruits, with hints of unripe pear and green apple, lychee (fruit with the typical smell of grapes in the various stages of ripeness), notes of jasmine and thyme and a slight aftertaste of lime.
Taste: Reminiscent of apple scent, it is fresh and in its harmony has a remarkable persistence given by the evident acidity.
Pairings: Risotto with seafood. “Scampi mojito”, raw scampi sprinkled with lime oil and mint. Thanks to its complete personality it is also an excellent sparkling wine for receptions and toasts.

Curiosity: The Brunei area takes its name from an ancient locality cultivated with prunus, the Latin name for plum. The wine recalls the taste of unripe wild plum.
