Pierluigi Tolaini's goal is to produce a great wine, without compromise, with the stylistic profile of the great Bordeaux Chateaux. This ideal is represented by Picconero, whose production only takes place in great vintages.
For the Picconero blend, only the best plots of Merlot and Cabernet Franc are chosen year after year, giving life to a full-bodied, complex and elegant wine with a long aging potential in bottle.
Production area: Chianti Classico, Tuscany
Soil: Silt and clay with a considerable presence of skeleton.
Age of the plants: Vineyards planted in spring 2000.
Plant density: from 6,900 to 11,000 plants per hectare.
Production: 50 qt./ha.
Production: 7900 bott. (2009); 16,500 bottles (2010); 15,500 bottles (2011); 4,200 (2014); 9,000 (2015); 2,500 (2016).
Aging: 12 months in the bottle.
Vinification: After selection in the vineyard and in the cellar, the grapes are de-stemmed and introduced whole in truncated conical wooden tanks.
Alcoholic fermentation: In thermo-conditioned truncated conical wooden tanks, equipped with automatic temperature control, keeping the must in contact with the skins for about 30 days, during which manual pigiage and pumping over every 4-6 hours and a delestage are performed per week.
Malolactic fermentation: In French oak barriques (100% new).
Aging: On fine lees for 6 months in barriques, 18 months in barriques.
Clear, very deep ruby red with garnet reflections. Clean with intense aromas of red fruit, pepper, licorice and vanilla. Complex structure with soft and round tannins, aromas of blackberry, raspberry and an aftertaste rich in red fruits, vanilla and balsamic notes.
Alcohol content: 14.5%
